New Cocktail Bar in Delhi Aims to Redefine Tequila and Mezcal Experience

The capital’s nightlife circuit has a new entrant with the launch of The Agave Room, a concept-driven cocktail bar that seeks to bring tequila and mezcal into sharper focus through a curated, immersive drinking experience.

Positioned as more than a conventional bar, The Agave Room centers its offering on agave-based spirits, presenting them as products of heritage, geography and craftsmanship rather than casual indulgences. The concept draws inspiration from ancient Aztec philosophy, structuring the space and menu around five elemental forces—Earth, Fire, Air, Water and Teotl—intended to shape both the cocktail program and the overall guest experience.

The venture is led by industry professionals Vijay Prakash (Veepee) and Vinay Singh Chand, combining creative direction with operational execution. Prakash, who has over two decades of experience in the beverage sector, said the idea emerged from his exposure to agave culture in Mexico.

“My intention was to introduce these spirits in a way that reflects their origins—rooted in land, craft and ritual—rather than as just another category of drinks,” he said, adding that each cocktail is designed as part of a larger “ritual” aimed at enhancing sensory engagement.

Chand, who has worked across nightlife and hospitality formats, oversees operations and guest experience, focusing on translating the concept into a cohesive, high-end environment.

At the core of the bar is a cocktail menu structured as an “elemental narrative”. Signature drinks include The Harvest (Earth), Melon Flow (Water), Hot and Holy (Fire), Guava Whisper (Air) and Golden Union (Aether), each crafted to evoke distinct flavor profiles and moods. The program is curated by Prakash along with mixologist R. Ngaovane (Ava), with an emphasis on storytelling through ingredients and technique.

Complementing the beverages is a food menu designed to pair with the cocktails, featuring a mix of plant-based and meat dishes such as black bean and quinoa salad, stuffed chilli, Mexican meatballs, jackfruit carnitas, chicken chipotle flatbread and pork ribs. The offering aims to balance smokiness, spice and acidity in line with agave-forward drinks.

The bar has a seating capacity of 68 and features interiors inspired by the agave plant, with green tones, stone surfaces and textured materials such as velvet and leather. The operators said the space is designed to transition from a more relaxed weekday setting with tastings to a high-energy weekend atmosphere featuring genres such as Afro house, disco and electronic music.

Open daily from noon to 1 a.m., The Agave Room has an average cost for two of around ₹3,000 ($35–$36). Industry observers say its focused positioning on agave spirits could help carve out a niche in Delhi’s increasingly competitive premium bar segment, where experiential and theme-led formats are gaining traction.
